Goodbye and Thank you


I want to say thank you to everyone who has supported me at O's steak and seafood for the past 3 and 1/2 years. It is time for me to move on to bigger and better things. I walk away happy and excited to work on a project that I have been planning for the last 2 years.

Top 5 Things I will not miss

1. Getting sick 45 minutes after eating in the cafeteria
2. The ridiculous circa 1960's chefs hat they made me wear
3. Being open 365-24-7
4. Cooking a "pop-up" for 150
5. No music


Top 5 Things I will miss
1. The Strabucks machine in the lobby
2. The limitless supply of liquid nitrogen
3. Some of the people
4. Being able to order 20 lobsters, a piece of foie and some kobe
5. The engineering department

Haven't talked to you in awhile but I've still been reading your blog. I always enjoy it and hope you keep it up in your future. Change is always exciting, I think that's what draws us to cooking.

Oh no! Ian hate to see you leave. Is this immediate? Loved coming to try your foods. Was in there 6 or so times and took the cooking class with you in denver with my wife. Not sure if you still have my email, but I really want to know where you end up. Thanks for the amazing meals!

Hay Ian...I'm not sorry to see u leave, because i know this just means you will be moving on to better things in your career. O's was just another stop in your journey as a growing chef. Good luck to you on your new project, if it's in the Denver metro area u can b sure i will be stopping in. Banzai!

Thanks for the best dinner my wife and I ever had! (#100, I was the chemist who dunked his flower in LN) I'll be keeping a close eye on your blog in case you get another gig in Colorado. Best of luck and thanks again!

My wife and I went to O's several times for anniversaries and Valentine's Day because we always new the menu would be great. We'll look for your next adventure.

I am disappointed to read this, I have enjoyed reading your blog and have been planning on trying one of your menus soon, sorry to hear that I won't get the chance now. I sure hope that you resurface with similar menus somewhere else in the Denver metro area! Good luck!

This is Brian Melton, formerly of Denver Magazine (they fired my risk-taking ass in June shortly after we visited you at O's and after I took your Gastro-class). Just wanted to wish you well with what's next, we're lucky to have you in Denver.
